Why the amount of meat  premixes balance is different than the amount of food premixes make (and how much meat each bag of EZComplete balances and how much food each bag makes)

Yes, the products should be refrigerated after opening. This maintains freshness longer. If you didn't see the banner on the front of the package for a few weeks to a few months after opening it, the premix or egg yolk should be fine, but please put it in the refrigerator or freezer now. You can store it in the freezer, it will remain a powder as the moisture content is just 3%. If it was not refrigerated after opening and the temperature has risen to over 85F (29.4C) for any length of time, the enzymes in the powder will be deactivated, but it has not become harmful. If it smells off (like vinegar or rancid fat), do not use it. It is otherwise OK to use.
